Whitney’s Recipe for 5-Minute Spicy Hummus

Ingredients

· 1 (15 oz) can chickpeas, drained and rinsed

· ¼ cup tahini

· 2–3 tbsp fresh lemon juice

· 1 small garlic clove

· 2 tbsp extra virgin olive oil (plus more for serving)

· 1-2 tbsp harissa

· ½ tsp salt (adjust to taste)

· 2–4 tbsp cold water (for texture)

Instructions

1. Add the tahini and lemon juice to a food processor or blender and blend for about 30 seconds.

2. Add garlic, olive oil, cumin, and salt. Blend again.

3. Add the chickpeas and blend until smooth.

4. Slowly add cold water (1 tbsp at a time) until the hummus reaches your desired creamy consistency.

5. Taste and adjust salt or lemon if needed.

Serve Spread in a bowl and drizzle with olive oil. Optional toppings:

· paprika

· chopped parsley

· roasted chickpeas

· toasted pine nuts

Tip for extra-smooth hummus: If you have a few extra minutes, peel the skins off the chickpeas before blending. It makes a surprisingly silky texture.
